Ingredients
2.5 kg lean beef stew meat (diced)
3 kg canned kidney beans (drained and rinsed)
2 litres low-sodium beef broth
1.5 kg carrots, chopped
2.5 kg diced potatoes
2 tbsp olive oil
1 tbsp garlic powder
1 tbsp black pepper
1 tbsp salt
Preparation
Step 1
Heat olive oil in a large pot and brown the diced beef.
Step 2
Add the carrots, potatoes, kidney beans, beef broth, garlic, salt, and pepper.
Step 3
Bring to a boil, then reduce heat and simmer for 45 minutes until beef and vegetables are tender.
Step 4
Serve hot and enjoy a hearty meal.
