Level 4 Purée

Ingredients
2.5 kg cauliflower, chopped
2.5 kg broccoli, chopped
1.5 litres milk
200g cheese (cheddar), grated
2 tbsp butter
1 tbsp salt
1 tbsp black pepper
Preparation
Step 1
Boil cauliflower and broccoli until very soft.
Step 2
Blend vegetables with melted butter, milk, and cheese until smooth.
Step 3
Ensure no lumps remain and the purée holds its shape before serving.
