Ingredients
30 skinless chicken thighs (diced)
1.5 kg long-grain brown rice
2.5 kg frozen mixed vegetables (peas, carrots, corn)
2 litres low-sodium chicken broth
3 tbsp olive oil
1 tbsp garlic powder
1 tbsp salt
1 tbsp black pepper
Preparation
Step 1
Preheat oven to 180°C (350°F).
Step 2
Heat olive oil in a pan and sauté diced chicken until browned.
Step 3
In a large casserole dish, mix chicken, rice, frozen vegetables, and chicken broth.
Step 4
Cover with foil and bake for 45 minutes until rice is tender.
Step 5
Serve warm and enjoy.
