Creamy Chicken & Sweet Potato Purée

Ingredients

  • 3 kg skinless chicken breast

  • 3 kg sweet potatoes, peeled and cubed

  • 1.5 liters low-sodium chicken broth

  • 500 ml milk

  • 3 tbsp olive oil

  • 1 tbsp garlic powder

  • 1 tbsp salt

  • 1 tbsp black pepper

Preparation

Step 1

Boil sweet potatoes in a large pot of water until completely soft, about 20 minutes.

Step 2

Simmer chicken in low-sodium broth for 30 minutes until very tender and fully cooked.

Step 3

Transfer the cooked chicken and sweet potatoes into a food processor. Add half the broth and milk.

Step 4

Blend until smooth, adding more broth as needed to achieve a thick, uniform purée with no lumps.

Step 5

Check that the purée holds its shape on a spoon but falls off easily when tilted. Serve warm.
