About the Recipe
Level 4 Purée

Ingredients
3 kg skinless chicken breast
3 kg sweet potatoes, peeled and cubed
1.5 liters low-sodium chicken broth
500 ml milk
3 tbsp olive oil
1 tbsp garlic powder
1 tbsp salt
1 tbsp black pepper
Preparation
Step 1
Boil sweet potatoes in a large pot of water until completely soft, about 20 minutes.
Step 2
Simmer chicken in low-sodium broth for 30 minutes until very tender and fully cooked.
Step 3
Transfer the cooked chicken and sweet potatoes into a food processor. Add half the broth and milk.
Step 4
Blend until smooth, adding more broth as needed to achieve a thick, uniform purée with no lumps.
Step 5
Check that the purée holds its shape on a spoon but falls off easily when tilted. Serve warm.
