Ingredients

  • 500g pitted dates (soaked in warm water for 10 minutes)

  • 3 ripe bananas

  • 500 ml full-fat milk

  • 250 ml double cream

  • 2 tbsp honey (optional, for added sweetness)

  • 1 tbsp cinnamon (optional)

  • 1 tbsp vanilla extract (optional)

Preparation

Step 1

Soak the dates in warm water for 10 minutes to soften them. Drain the water and set the dates aside.

Step 2

Peel and slice the bananas.

Step 3

Place the soaked dates and banana slices into a food processor or blender.

Step 4

Add the full-fat milk, double cream, and honey (if using). Blend until smooth, scraping down the sides if necessary to ensure everything is well combined.

Step 5

For added flavor, add cinnamon and vanilla extract, then blend again to incorporate.

Step 6

Check the consistency of the purée. Add more milk or cream as needed to achieve a smooth, thick but easily spoon able texture.

Step 7

Ensure the purée is smooth and free of lumps. It should hold its shape when spooned but fall off the spoon gently.

Step 8

Serve the purée warm or chilled, depending on preference.
