Ingredients
3 kg carrots, diced
2.5 kg celery, chopped
3 kg onions, diced
5 kg tomatoes, chopped
2.5 kg red lentils, rinsed
7 litres vegetable stock (low-sodium)
2 tbsp turmeric
2 tbsp cumin
1 tbsp black pepper
5 cloves garlic, minced
3 tbsp olive oil
Preparation
Step 1
Heat olive oil in a large pot. Sauté onions, garlic, carrots, and celery until softened.
Step 2
Stir in turmeric, cumin, and black pepper. Cook for 1 minute to release flavours.
Step 3
Add chopped tomatoes, lentils, and vegetable stock. Bring to a boil.
Step 4
Reduce heat and simmer for 45 minutes, stirring occasionally.
Step 5
Blend partially for a creamy texture while keeping some chunks.
Step 6
Adjust seasoning and serve warm.
