Ingredients

  • 1.5 kg dried lentils

  • 2.5 kg mixed vegetables (carrots, celery, onions), chopped

  • 2 litres low-sodium vegetable broth

  • 3 tbsp olive oil

  • 1 tbsp garlic powder

  • 1 tbsp black pepper

  • 1 tbsp salt

Preparation

Step 1

Rinse lentils under cold water.

Step 2

Heat olive oil in a large pot and sauté chopped vegetables until softened.

Step 3

Add lentils, vegetable broth, garlic, salt, and pepper.

Step 4

Simmer for 30 minutes until lentils and vegetables are tender.

Step 5

Blend some of the soup for a smoother texture, if desired.
