Ingredients
1.5 kg dried lentils
2.5 kg mixed vegetables (carrots, celery, onions), chopped
2 litres low-sodium vegetable broth
3 tbsp olive oil
1 tbsp garlic powder
1 tbsp black pepper
1 tbsp salt
Preparation
Step 1
Rinse lentils under cold water.
Step 2
Heat olive oil in a large pot and sauté chopped vegetables until softened.
Step 3
Add lentils, vegetable broth, garlic, salt, and pepper.
Step 4
Simmer for 30 minutes until lentils and vegetables are tender.
Step 5
Blend some of the soup for a smoother texture, if desired.
