Vegan Friendly, Something Different

Ingredients
3 kg canned chickpeas, drained and rinsed
500 ml coconut milk
300g spinach
2 tbsp mild curry powder
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
300g cooked rice (can use pre-cooked rice for quicker prep)
Preparation
Step 1
Heat olive oil in a large pan, sauté onion and garlic until softened.
Step 2
Add curry powder and cook for 1 minute.
Step 3
Add chickpeas and coconut milk, stir, and simmer for 15 minutes.
Step 4
Add spinach and cook until wilted.
Step 5
Serve the curry over rice.
