Something Different, Level 4 Purée

Ingredients
3 kg ripe avocados
1 kg unsweetened cocoa powder
500g almonds (ground)
1.5 litres full-fat milk
250 ml double cream
500g honey
Preparation
Step 1
Scoop out avocado flesh and place in a blender.
Step 2
Add cocoa powder, ground almonds, and half the milk.
Step 3
Blend until smooth, gradually adding double cream and honey.
Step 4
Ensure the purée is thick, creamy, and completely lump-free before serving.
Step 5
Chill before serving for a smoother texture.
