Ingredients
1 large butternut squash, peeled and cubed
3 cups fresh spinach
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp maple syrup
Salt and pepper to taste
Preparation
Step 1
Preheat the oven to 180°C. Toss butternut squash cubes in olive oil, salt, and pepper, then roast for 25-30 minutes until tender and slightly caramelized.
Step 2
In a small bowl, mix balsamic vinegar and maple syrup for the dressing.
Step 3
Once the squash is roasted, allow it to cool slightly. Toss with fresh spinach and drizzle with the dressing.
Step 4
Serve warm or at room temperature.
