Vegan Friendly, Manager Emergency

Ingredients
1.5 kg carrots, peeled and chopped
1.5 kg parsnips, peeled and chopped
1.5 kg potatoes, peeled and chopped
2 onions, chopped
2 cloves garlic, minced
500 ml vegetable broth
250 ml coconut milk
2 tbsp olive oil
2 tbsp fresh thyme (or 1 tbsp dried)
Salt and pepper to taste
Preparation
Step 1
Heat olive oil in a large pot and sauté onions and garlic until softened.
Step 2
Add the chopped root vegetables and sauté for 5 minutes to enhance their flavor.
Step 3
Add vegetable broth and thyme, and bring to a simmer. Cook for 20 minutes or until the vegetables are tender.
Step 4
Stir in coconut milk, adjust seasoning with salt and pepper.
Step 5
Serve warm with a thick, stew-like consistency.
