Ingredients

  • 120 eggs

  • 3 kg spinach, chopped

  • 1.5 kg grated cheese (low-fat)

  • 300 ml milk (low-fat)

  • 2 tbsp olive oil

  • 1 tbsp black pepper

  • 1 tbsp salt

Preparation

Step 1 Whisk eggs with milk, salt, and black pepper.

Step 2

Sauté spinach in olive oil until wilted.

Step 3

Pour egg mixture over spinach and cook on low heat.

Step 4

Sprinkle cheese and fold omelette in half.

Step 5:

Cut into portions and serve warm.
