Sweet Potato & Black Bean Chilli

Ingredients

  • 2 kg sweet potatoes, peeled and cubed

  • 2 kg canned black beans (drained and rinsed)

  • 2.5 litres vegetable broth

  • 1.5 kg diced tomatoes (canned)

  • 3 tbsp olive oil

  • 1 tbsp chili powder

  • 1 tbsp cumin

  • 1 tbsp salt

  • 1 tbsp black pepper

Preparation

Step 1

Heat olive oil in a large pot and sauté sweet potatoes until slightly softened.

Step 2

Add black beans, tomatoes, vegetable broth, and spices.

Step 3

Bring to a boil, then reduce heat and simmer for 30 minutes until the sweet potatoes are tender.

Step 4

Serve warm, optionally topped with a dollop of sour cream.
