Ingredients
2 kg sweet potatoes, peeled and cubed
2 kg canned black beans (drained and rinsed)
2.5 litres vegetable broth
1.5 kg diced tomatoes (canned)
3 tbsp olive oil
1 tbsp chili powder
1 tbsp cumin
1 tbsp salt
1 tbsp black pepper
Preparation
Step 1
Heat olive oil in a large pot and sauté sweet potatoes until slightly softened.
Step 2
Add black beans, tomatoes, vegetable broth, and spices.
Step 3
Bring to a boil, then reduce heat and simmer for 30 minutes until the sweet potatoes are tender.
Step 4
Serve warm, optionally topped with a dollop of sour cream.
