Ingredients
3 kg sweet potatoes, peeled and chopped
1 litre coconut milk
250 ml double cream
250g butter
1 tsp cinnamon (optional)
Preparation
Step 1
Boil sweet potatoes until very soft, about 10 minutes.
Step 2
Drain and transfer to a blender.
Step 3
Blend with coconut milk, butter, and double cream until smooth.
Step 4
Serve warm, ensuring a thick but spoon able consistency.
